Caye Caulker has alot to offer. It's a laid back kinda of a place that for years was considered off the beaten path and in turn lured many a traveller toting a backpack, snorkelling gear and a camera. Over the years the island has moved more mainstream with several new hotels and vacation-retirement homes the length of the island but has retained it's tropical charm.

And no other place on Caye Caulker exemplifies what Caye Caulker is all about than The Rasta Pasta Rainforest Cafe and Genesis in the Jungle Spice Company.

Located on Front Street, Caye Caulker's de-facto main street and just up from the water taxi pier The Rasta Pasta Rainforest Cafe and Genesis in the Jungle Spice Company is the place to be and be seen while dining or drinking out on the island. Created by Encino California native and naturalized Belizean Maralyn Gill, a former clothing designer that stitched the onstage duds for the back-up singers for the Grateful Dead, and her late husband Albert Gill, a legendary Reggae Belizean reggae musician, Rasta Pasta began as a pizza place originally over on Ambergris Caye. A few years ago the restaurant relocated to Caye Caulker.

Maralyn and her daughter today manage the place with a handful of some of the friendliest bar and restaurant staff in the Caribbean. The menu boast a wide variety of unique dishes, from Thai food to Indian shrimp curry dishes to Pesto pasta with grilled chicken to grilled whole fish to Belizean jerk chicken to the biggest burritos in Belize. Rasta Pasta offers homemade breads, incredible chocolate chip cookies and cheesecake that goes perfect with the Belizean coffee they pour. They also have a full service bar serving ice cold Belikins as well as all of your favourite tropical delights. Serving hearty breakfasts with fresh squeezed juices, lunch and dinner at a table positioned in the sand on the beach under swaying palms is what Belize is all about.

And when it's time to go, be sure to pickup some spice for the Genesis In The Jungle shop that Maralyn's operates out of her living room above the restaurant. There you can purchase the spices you'll need for Belizean Rice & Beans spice, Belizean Jerk Chicken spice, Hot & Spicy Belizean Blackening spice, Belizean Curry with Rice Pilaf Belizean spice and Belizean Black Dinner Chimole spice. Don't worry; be happy, for each of the spice packets also comes with a detailed recipe on the back.
